Recipe: Simple One Pot Quinoa & Veggies over Greens



RECIPE: Simple One Pot Quinoa & Veggies over Greens


Ingredients:
1 cup uncooked quinoa (soaked, drained and rinsed)
2 cups water or broth (I used Organic Free-range Chicken broth)
1/2 onion, diced
1/2 large sweet potato, cut into 1/2 inch cubes
2-3 carrots, chopped
1/2 teaspoon sea salt
1/2 teaspoon turmeric
Combine above ingredients in a medium saucepan, and bring to a boil. Reduce heat to low and cook for 15 minutes.
Serve a scoop over a bed of greens and top with sliced avocado.
Plenty of Leftovers allow you easy lunches for the week~
